چکیده

This paper reports on the design and fabrication of a High Temperature Short Time (HTST) camel milk pasteurization pilot plant. The objective of this project is to design and fabricate a low cost and practical camel milk pasteurization pilot plant which will work well in an agricultural setting in the Kingdom of Saudi Arabia. Fresh camel milk is a much sought after delicacies in the Arab world, usually sold directly by the farmer to the consumer without any further processing. However, this traditional method of milk handling has a few limitations where there is a possibility of milk contamination during handling, excess milk cannot be stored and the excess milk cannot be transported to other localities further away limiting the economic opportunities of the farmers. This pasteurization plant is based on High Temperature Short Time (HTST) continuous process where the raw camel milk will be indirectly heated to 72oC via a heat exchanger. The milk temperature will be maintained at 72 oC for 15s in a holding tube to kill most of the harmful microorganisms present in the milk. The pasteurized milk is then ready for consumption or can be refrigerated and stored for up to 21 days. With the introduction of this pasteurization pilot plant, it is hoped that the hygiene factor and the livelihood of the farmers will be improved where the camel milk can be stored longer and transported to stores safely to meet the demands of consumers.

Flow characteristics of a pilot-scale high temperature, short time pasteurizer.

In this study, we present a method for determining the fastest moving particle (FMP) and residence time distribution (RTD) in a pilot-scale high temperature, short time (HTST) pasteurizer to ensure that laboratory or pilot-scale HTST apparatus meets the Pasteurized Milk Ordinance standards for pasteurization of milk and can be used for obtaining thermal inactivation data. The overall dimensions...

Effect of two pasteurization methods on the protein content of human milk.

The Holder method is the recommended pasteurization method for human milk banks, as it ensures the microbiological safety of human milk (HM). The loss of some biologically active milk components, due to the heat treatment, is a main limit to the diffusion of donor HM. High-temperature short-time (HTST) pasteurization may be an alternative to maintain the nutritional and immunological quality of...

Antimicrobial and antiviral effect of high-temperature short-time (HTST) pasteurization applied to human milk.

In the United States, concerns over the transmission of infectious diseases have led to donor human milk generally being subjected to pasteurization prior to distribution and use. The standard method used by North American milk banks is Holder pasteurization (63 degrees C for 30 minutes). The authors undertook an experiment to validate the effects of a high-temperature short-time (HTST) pasteur...

Effective heat inactivation of Mycobacterium avium subsp. paratuberculosis in raw milk contaminated with naturally infected feces.

The effectiveness of high-temperature, short holding time (HTST) pasteurization and homogenization with respect to inactivation of Mycobacterium avium subsp. paratuberculosis was evaluated quantitatively. This allowed a detailed determination of inactivation kinetics. High concentrations of feces from cows with clinical symptoms of Johne's disease were used to contaminate raw milk in order to r...

A Preliminary Assessment of HTST Processing on Donkey Milk

Due to increasing attention from consumers on non-bovine milk types, and to the increase in the number of small dairy donkey farms in Italy, farmers require more advanced and reliable processing devices, in order to guarantee a safe product of high quality. To this aim, a new small-scale High-Temperature Short-Time (HTST) pasteurizer (72 °C for 15 s), prototyped by the authors, was tested on do...
